Stuffed Burgers

So I went to the grocery store today with every intention of just picking up some cheddar cheese so that I could make bacon and cheddar stuffed burgers. Then as I was browsing through the aisle I had another thought. I saw some pancetta and mini pepperoni and thought yep that’s what I’m going to get. I decided I was going to make pizza stuffed burgers instead. So in football terms I called an audible.

So here’s the list of what you are going to need if you want to make these for your family and friends.

  1. 1 lb. of ground beef
  2. garlic powder
  3. black pepper
  4. 1 5oz. package of pancetta or you can go to the deli and ask for that amount
  5. 1 8oz. package of italian blend shredded cheese
  6. 1 5oz. package of mini pepperoni or you can buy pepperoni and dice it up whichever way works for you
  7. 1 jar of tomato sauce
  8. your choice of burger rolls

So the first thing you want to remember is that in order to make the burger you are going to need two halves of a burger. You want them to be thin about 1/2 inch thick each side. You want to season them I use garlic and pepper. Since you are going to be putting pancetta inside the burger you may not want to season it with salt because the meat is already salty itself. Just a health tip on that one.


Once you have your halves seasoned and ready to go it’s time for the filling. You want to make sure that you cook the pancetta before putting it inside the burger. You do not want to put that raw inside of a raw burger. While you are cooking the pancetta it won’t take very long you can start filling it with your other things. A little bit of cheese if I had to estimate I’d say about a tablespoon. Then add about a teaspoon of the mini pepperoni and about a teaspoon of the cooked pancetta. Since you are using two meats you do not want to overload them.


You want to make sure when you are adding the filling it is in the center. The point of the stuffing is so that the cheese is in the middle of the burger. You don’t want it running out the side of the burger while it’s cooking. Once it’s filled than you want to place the other half over top and press them together. You want to absolutely make sure that they are pressed together tightly so that the burger does not fall apart on you. That’s why it’s recommended that you use meat with a little more fat content like an 80%. I know if you are used to the 90-95% lean range it will be a bit different. Lean meat doesn’t hold as well in these situations.

Don’t forget that burgers shrink when you are cooking them. Once you have the patty ready than it’s time to place in in the pan or on the grill. Again it’s your preference to how you cook your burgers. I am afraid of grills…yes this is a true thing so I always do my burgers on a pan on the stove top.

Once the burger is cooked it’s time to add the tomato sauce to top it off and then enjoy it. You can use your favorite jar of sauce and just put a few spoon fulls on top of the burger.


I can tell you that I was very pleasantly surprised by how good this turned out. It was something I just decided to do on a whim. When you bite into it and you get the salty from the pancetta and the spicy from the pepperoni it’s delicious. Not to mention anything with melted cheese is good in my book.
