I’m back…

So sorry everyone for the extended absence. I was in the process of moving states and jobs so I did not have time to keep up with the website during so many changes happening. So as you could probably tell from one my last posts I discovered how incredible spaghetti squash is. As a girl who loves pasta finding a healthier alternative to actual pasta was something I was so excited about. I had never tried it before until a few months ago. I’m really glad I did expand my horizon and try it. Tonight I decided to use left over spaghetti squash I already had cooked to make something.

What I originally intended to make turned into something completely different on accident but I’m not upset about it because it ended up tasting really good. So the list of what I used is.

  1. Spaghetti Squash
  2. Cherry Tomatoes
  3. Onion
  4. Red Pepper
  5. Chicken
  6. Corn
  7. Basil spice
  8. Bay leaves spice
  9. Italian Seasoning
  10. Garlic Salt
  11. Thyme
  12. Salt
  13. Pepper
  14. Plain tomato sauce

You want to start by cooking the veggies. Luckily there was some corn on the cob ready so I just took the cooked corn right off the cob to add it into the onion and pepper mix. To cook the onions and peppers I simply used some canola oil. I usually use Extra Virgin Olive Oil (EVOO) but I was out so I used the next option I had available. Then it’s time to get the chicken cooked and added into the mixture.


I also took the cherry tomatoes and cut them in halves and added them into the pot to cook down with everything else. Once that was all said and done I poured in the tomato sauce.


I had planned on this just being the topping to the spaghetti squash. However, I poured the squash into the sauce that I had made. This is what ended up creating a completely different looking meal entirely.

I decided why not make some garlic toast to go along with the now turned soup like dish. The spices I listed above were added to it to give it more flavor. Then for the finishing touch when serving sprinkle some parsley in it.

I apologize for the not so quality photos. I’m still unpacking so I have to try to find my cameras. Anyway, it’s good to be back and ready to blog again.
