Thursday’s Dinner

I’d been wanting to make something like this for a while now. Instead of eating pasta I decided to pull out some chicken, potatoes, peppers, and sliced mozzarella.

It’s a pretty simple thing to prepare. You just have to make sure you time everything just right. Since you’re going to bake the potatoes and the peppers in the oven you’re going to want to make sure they’re in the oven for a good 10 minutes or so before you start the chicken. The chicken is going to take a lot less time to cook than the potatoes are going to.

I use thin sliced boneless skinless chicken breasts
If you’re like me and don’t want to waste time dicing buy already cut frozen potatoes

I just do a simple seasoning on the chicken. Salt and pepper nothing else. Since you’re going to be adding flavors to the meal afterwards. You want to keep checking on the potatoes. You want them to start browning a little that’s how you’ll know when they are ready to come out of the oven. You’ll also smell the peppers which I must say does add quite the aroma to the kitchen.

Once the potatoes and peppers are cooked time to take them out of the oven. If you timed everything okay your chicken should also at this point be ready as well. Then you’re going to push the potatoes to one side of your baking dish. Then you’re going to put the chicken on the other side of the baking dish. This is where the sliced mozzarella comes in to play. You’re going to put the sliced mozzarella on top of the chicken. Sprinkle a little bit of basil on top and add tomato sauce. 


You can add whatever else you want to add to this dish. If you want to add a butter sauced or if you want to add a tomato sauce feel free to do that. For mine I added fat free tomato sauce. Then I sprinkled it with some Italian seasoning. Pop it back into the oven and let the cheese melt down and then pull it out once the cheese is melted. Once it’s done than it’s time to eat it and enjoy.
